An update on my Dry Cider recipe I am trying out. I moved it to the secondary on Saturday and took a gravity reading which only read a 1.020 (3.5%), much higher then I expected especially consider the champagne yeast I used. Even after moving it the air bung was not showing any action so I was worried about a stalled fermentation.
Well I took another reading just now just to be safe and it read 1.000 (6% ABV) which is exactly what I was looking for! That is a huge difference in only a matter of a couple days. With any luck another couple weeks in the fermentor and I should see as a final gravity of below that.
From the pick you can tell it is still very cloudy. Hopefully this will clear in the coming weeks.
