Home Brew – Black Dragon Stout


This is the second of the Three Dragon Ales; a molasses gruit stout, flavoured with Wormwood, Hyssop and Elderberry.

Black Dragon Stout

Grains/Adjuncts

  • 3.0 lbs Pale Ale Malt
  • 2.25 lbs 2-Row Pale Malt
  • 0.5 lbs Roasted Barley
  • 0.5 lbs Chocolate Malt
  • 0.75 lbs Molasses @ 15 minutes

Hops/Herbs

  • 1.0 oz Fuggles @ 45 min
  • 0.2 oz Wormwood @ 45 min
  • 0.5 oz Hyssop @ 45 min
  • 0.5 oz Elderberry @ 10 min (to sanitize), left overnight in No-Chill

Misc

  • 1 tsp Yeast Nutrient
  • Pacman Yeast Starter

Procedures

  • Conditioned malt, milled once
  • Brew-in-a-Bag
  • Single Step Mash, ~150F-153F, 60 minutes, 2 gallons
  • Sparge, 4 gallons, 170F
  • 60 minute boil
  • No Chill

This beer lives up to its name of "Black Dragon".

•    Batch Size – 5 gallons
•    Actual OG: 1.041 (Eff: 75%), Estimated FG: 1.01 (4.2% ABV)
•    IBU – 32 (unsure of additional bitterness added by herbs)
