Another update on the experimental dry cider. Last night I bottled the approximately 3 gallons of cider. Final gravity was 0.996 which puts it at around 6-7% ABV. In two weeks from now I will crack one of those bad boys open and how it tastes. I took another sample and tasted it, but warm, flat cider can only be so good.
My only concern with the final product is how well I cleaned and rinsed the bottles. I am worried that there may have been trace amounts of the sanitizer left in the bottles as I rushed the cleaning; The #1 cardinal sin of brewing. I guess I will know in two weeks!
