Home Brew – Mead-Beer-Thing
Posted by bradinator in Beer Tasting, Experiments on September 7, 2010
What have I done? Instead of creating a masterpiece to appease the Home Brew Gods I have created a monstrosity. But wait… If by some miracle this turns out to quaffable and dare I say, deliciously quaffable, I may not only earn their forgiveness, but their favour as well.
The recipe as follows -
Bradinators Mead-Beer-Thing
Ingredients —
- 500ml Honey
- 2 cups Corn Syrup
- 1 cup Demerara Sugar
- 1 cup Corn Sugar
- 1 cup Light Dry Malt Extract
- 250ml Sunkiss Citrus Melody Juice
- 1 tbsp Yeast Nutrient
- 7 Litres of Water
- 1 cup Raisins
I cooked at a med-high temperature to help break down the honey and syrup. The raisins were added at the end left to steep in the hot mixture for nearly three hours. Once cooled I split it into two, 3.5 liter batches. Each got their own yeast. One will be getting EC-1118, a very high attenuation wine yeast and one will be getting the S-23 SafLager yeast, a beer yeast designed for cool temperatures.
The original gravity was around 1.048 and lord only knows if this will actually be drinkable. Mead’s need a VERY long time to settle and mellow out, so this may not be good for nearly a year.
Mead-Beer-Thing’s are a different creature all-together.
Home Brew – Uh oh…
Posted by bradinator in Experiments, Home Brewing on September 7, 2010
I was so sure that I was watching fermentation in the form of a bubbling air bung… I was utterly wrong. I took a gravity reading from my Hard Lemonade and it was still 1.040.
This is bad. Very bad.
I should have taken a reading before this, but in my over confidence with my home brewing skills I was sure it would take off. In an attempt to save this creation from imminent death (and toilet bound) I moved it to a secondary fermenter, removed all the lemon slices, dropped a 1/2 tablespoon of yeast nutrient into it and prayed to the Brew Gods for its salvation (there was a dance and small sacrifice involved fyi). I will take another reading in 2 days and see if there is any change.
I know the only way to truly appease the Home Brew Gods is by home brewing… So here I go. A home brewin’ yo.
